Apple Jelly – Batch I, 2008

I have very little experience with processing apples, and this is the first year I’ve ever had apples from my own tree to work with. So I did lots of reading. From what I’ve read, you’re supposed to make jelly in small batches. Did I listen on Batch I? Nope. Loaded my poor-quality stockpot full, got it going on my biggest burner, and burned the living crap out of it.

But don’t worry, that mistake won’t leave the kitchen – Batch I of apple jelly this season is in the compost heap.

On to batch II…
