More spoils from friends’ globetrotting – this time a fresh arrival from Thailand. I was gifted an assortment of Nittaya brand curry pastes, and good lord are they good. I also love their address: 9/10 Moo 4 Ladlumkeao-Banglane, Rahang, Ladlumkeao, Pathumtani 12140 Thailand. Guaranteed to get lost trying to find that.
I suppose I’m no authority on red curry – but I have had it a fair number of times, and this would be the best I’ve ever had and certainly the best I’ve ever cooked with. It puts to shame my efforts to make curry pastes from scratch. My wife and I ooo and ahhh every time, and try to not eat it all day, day after day. So if anybody out there finds it available for sale online or in Canada – please drop a comment.

Another thing I liked about it is the directions. These are paraphrased, and they provide more detail, but the point is: blanch meat in some water and coconut milk [it removed a lot of impurities/scum]. To make sauce, add 50g of paste to a can of coconut milk. Tweak balance with fish sauce and palm sugar if desired [which I do]. Eat it. Fantastic. Then I thought about it…one large pack is 500g. That’s 10 batches of lovely thai curry. Per pack, and I have 3 large, and 2 small. That’s about 40 meals of killer thai curry!!? Possibly best travel-gift-ever.
